Over the weekend, I wanted to make jerk chicken with rice-and-peas for lunch.
My plan was to use the rotisserie on my BBQ for the chicken but when I woke up Sunday morning I saw it was an overcast sky with drizzle. I still thought of using the BBQ when it started raining heavily so I had to move to the oven.
I wasn’t entirely satisfied with my meal; I have room to improve, particularly with the rice-and-peas dish.
